katsuya encino sushiFor many years Chef Katsuya Uechi has been bringing Japanese culinary artistry to restaurants all over the world with his distinctive style and execution of high quality, authentic Japanese cuisine. Born in Okinawa, Japan, he completed his apprenticeship in cities like Tokyo, Okinawa, and Osaka before venturing overseas to the United States. He started working in restaurants in Los Angeles in 1984 as a classically trained chef. In 1997 he opened his first Katsu-Ya restaurant in Studio City. With his inventive combination of Japanese and California cuisine, he soon won a loyal following. His inspired dishes like crispy rice and spicy tuna were skilfully created from a combination of Japanese and California dishes.

In 2003 Katsuya Uechi opened his modern, Zen-inspired KOI Restaurant in West Hollywood that quickly earned him great reviews and large crowds. Soon after that, he opened his second Katsu-Ya restaurant in Encino that also turned out to be an immediate success.

In 2006 he formed a successful partnership with the global hospitality and entertainment company, SBE. In collaboration with SBE, he has been able to share his vision for Japanese cuisine all over the world and in 2007 the Angelino Magazine named him ‘Chef of the Year’. In the same year, Katsu-Ya was selected as one of the best restaurants in 2007 by Travel + Leisure.

Today Chef Katsuya Uechi is recognized as a major trendsetter in the world of Japanese cuisine and is one of only 4 Master Sushi Chefs in LA. He has featured on several cooking shows including Top Chef and the Japanese documentary – ‘Kono Nihonjin g sugoi rashii. Brand New Japan’.

One of the problems Chef Katsuya faced as the business grew was finding and training chefs for his restaurants. Most of the young chefs in America came from different countries and did not have any knowledge about sushi and the basic rules of culinary hygiene it required. Realizing the need for a place where chefs can be taught in a logical way how to prepare Japanese cuisine, together with Mr. Kanai, founder of Mutual Trading, he started a sushi school in Los Angeles where chefs are taught the basics of Japanese cuisine and how to make sushi.

Be sure to call them first to make reservations. They same applies for all Japanese restaurants in the area, such as the Benihana Encino restaurant.

They are open for lunch from Monday to Friday between 11.30 am and 2.00 pm and between 12.00 pm and 2.30 pm on Saturdays.

Dinner is served from Mondays to Thursdays from 5.30 to 10.00 pm and on Fridays between 5.30 pm and 10.30 pm.

On Saturdays, they are open from 5.00 pm until 10.30 pm and on Sundays from 5.00 pm to 9.30 pm.
